Banana Bread

I was craving a Christmas treat so made this beautiful dairy free and gluten free banana loaf. This isn’t just a recipe for Christmas of course! My mum used to make this for us all the time and we loved it. This is maybe not the healthiest recipe but definitely delicious and worth the calories!

Recipe:

  • 3 ripe bananas
  • 3 medium eggs
  • 1tsp bicarbonate of soda
  • 2tsp baking powder
  • 75g melted coconut oil
  • 3tbsp almond milk
  • 200g gluten free flour
  • 225g dark muscovado sugar
  • Pinch of salt
  • 1tsp cinnamon
  • 1tsp ginger
  • Handful of crushed walnuts

Method:

  1. Heat oven to around 180 degrees.
  2. Line a bread tin with some melted coconut oil so it doesn’t stick.
  3. Add all the dry ingredients to a bowl and mix well. Don’t include the walnuts.
  4. Repeat process for all wet ingredients.
  5. Add wet to dry ingredients and fully incorporate.
  6. Add in walnuts last and mix well.
  7. Pour batter into the bread tin and bake in the oven for around 45 minutes or until golden brown. Should be a harder crust on the outside and moist inside.
